Fresh Apple Cake

1 cup vegetable oil

2 cups sugar

3 cups flour

2 eggs

1 cup chopped walnuts

1 teaspoon soda

2 teaspoons vanilla

1/2 teaspoon salt

3 cups chopped fresh apples, peeled (or more if desired)

 
Combine oil and sugar. Add well-beaten eggs and vanilla. Measure and sift together flour, salt and soda. Add dry ingredients to first mixture. Stir in chopped fresh apples and nuts and combine thoroughly with above ingredients. Note: it will not look like a normal cake batter. Pour into oblong 13 inch x 9 inch pan and bake in 325° oven until done, approximately 1 hour and 5 minutes.

 

Caramel Glaze 

1 cup brown sugar

1/2 cup butter

1 teaspoon vanilla

1/4 cup half & half

 

Place butter and sugar in double-boiler and allow to melt. Blend well. Add half & half and bring to a full boil. Cool and add vanilla. Spread evenly over cooled cake.

 

Note: It’s great with vanilla ice cream or whipped cream.

 

 

Apple Harvest Cake

1¼ cup flour

1 cup whole wheat flour

1 tablespoon cinnamon

2 teaspoons baking powder

2 teaspoon salt

½ teaspoon baking soda

1 cup sugar

¾ cup brown sugar

¾ cup oil

3 eggs

1 teaspoon vanilla

2 cups or 3 medium finely-chopped cooking apples

 

Combine dry ingredients.  Add oil, eggs, and vanilla and mix well.  Add apples, stir in evenly.  Bake in 1 tube pan or 2 loaf pans at 350° degrees for 40 to 45 minutes. 

 

Topping

 

1/2 cup 10-X sugar

1 teaspoon vanilla

2 tablespoons milk

 

Mix well and spoon over cake or loaves evenly.
